When they move to assisted living, you can also put a calendar in their room and tell them to mark your upcoming visits plus other events that are important for them. This way, there will always be things to look for.

Besides staying in touch with your parents, you should also encourage and help them to stay in touch with their friends; this would be like a bridge between their old life and the new one.
